I love love love to eat so the idea of cutting out food groups is almost sacrilege. But I did discover/invent one healthy and meatless recipe I'm happy to make and eat, as long as it's not a daily sacrifice: roasted squash and Brussels sprouts with shaved goat cheese, basically a twist on a pumpkin/goat cheese salad because I'm Chinese and I can't eat just cold foods for dinner. I don't think we need a full-on list of ingredients and steps, right? It's basically just cubed squash, salted and drizzled with olive oil. Brussels sprouts, halved or quartered and slathered with a glaze made from honey, sriracha and lime juice. Roast together in the oven for 20 minutes or so (if you like your punkin super soft 'n baby-food like, then microwave it for a couple of minutes to speed up the process). Then shave goat cheese over it all and drizzle olive oil. Voila, dinner.
